Are you on team muffins or team cupcakes? Personally I prefer unfrosted muffins with a classic domed muffin top to cupcakes, which can be quite sugary sweet and unhealthy, though much more decorative and prettier. You can add nuts, seeds, fruits or other mix-ins to make muffins really interesting and less guilty. The batter of these muffins come together really quickly. However, I decided to make these muffins with creaming method, so the texture is much more airy and lighter, and add a coconut macaroon top, just for fun and extra chew. If you want to use muffin-method (combine the dry and wet ingredients separately, then combine them), you definitely can.

This nutty fruity crumb cake is perfect for brunch, as a dessert or an afternoon pick-me-up. They are scrumptious by themselves, with some clotted cream or a scoop of vanilla ice cream. Instead of butter, I used tahini to make the streusel, and sweetened the whole cake with a mix of date syrup and erythritol. If you want to make this gluten free, replace white spelt flour with oat flour.

Oozing with a flavorful butter-herb mixture, this keto-friendly fish version of this classic is definitely a winner. Perfect for entertaining or any weekday meal that will keep you satiated and energised. Butter mixture can be prepared beforehand and stored in the fridge until needed. The only thing I might change next time is to use MORE butter for the filling. If you want a thicker crust, then do a double crumb. You could serve this salmon Kiev with anything your heart desires, but a light salad or some blanched beans or asparagus would keep things really nutritious and healthy.

This simple spiced chicken is a super easy and scrumptious dinner made by roasting overnight-marinated bone-in, skin-on chicken thighs, then pairing with an earthy nocellara green olive walnut vinaigrette. Serve it with your desired sides, either rice, pasta, bread or just some roasted vegetables.
Grown in Castelvetrano, Sicily, Nocellara olives are picked young and cured in lightly salted brine, giving them their beautifuly bright green colour as well as their mild, buttery, meaty flavour.

Soft and tender pumpkin Cheddar yeast bread made from scratch. It’s delicious fresh or toasted and perfect for breakfast or sandwich. I used mashed roasted pumpkin, so it’s probably drier than the canned one. Adjust the liquid if necessary. Bold, sharp vintage Cheddar provides a nice contrast to the sweet creamy pumpkin, but you can use other aged cheese too.

Korma, or qorma (means 'to braise', or pan-sear) is a luxurious Indian curry, either meat, fish or vegetables, known for its harmonious blend of spices and a delicate, creamier, richer sauce that is made with ingredients such as cream, yoghurt, and/or nuts (cashews and almonds), while regular curry usually has a thinner sauce made with tomatoes, onions, and spices.
This eggplant korma recipe is made with classic Indian spices and ingredients, with eggplants baked instead of braised, with a homemade korma paste and coconut cream. It’s creamy, nutty and so flavourful. If you prefer milder curries, then this is the right one and perfect for kids too.
Tikka Chicken Wings with Seeded Topping and Saffron Yoghurt

Marinate chicken wings in tikka masala overnight then roasted in the oven the next day and served over a bed of thick saffron yoghurt and some crunchy seeds. They are truly the flavour bombs. The chiken needs to be roasted on a lower heat to prevent the spicy crust burning before the chicken is fully cooked through. The yoghurt needs to be started one day ahead and the chicken is also best left in the marinade overnight or at least 4 hours. If you want to use chiken thighs or drumsticks, then adjust the cooking time accordingly.
Agedashi Eggplant
Monday, April 07, 2025Agedashi meaning “fried and soaked in dashi stock” is a traditional and delicious Japanese favorite. Dashi powder can be easily found online (got mine from Amazon) or in Asian grocery stores. Or substitute it with chicken stock. Sprinkle with bonito flakes instead of sesame seeds if you can find some.
